Hominy Hummus - Homminus

Hummus is just deee-licious. Love it. Traditionally it's made with all chickpeas - but I've seen just about every kind of bean there is. In this case I added golden hominy -which is actually corn, but the flavor was knockout. Give it a try - you'll like this one garlicky, citrus punched dip.

1 15.5 ounce can garbanzo beans
1 15.5 ounce can yellow hominy
5 green onions, green tops included
juice of 2 lemons
juice of one lime
3 tbl tahini (sesame paste)
4 cloves garlic
1 tbl kosher salt
1 tbl dried oregano
1 tbl cumin
2 tbl fresh parsley
1 tsp fresh cracked black pepper
2 tbl olive oil

Put all ingredients in the bowl of a food processor and pulse until smooth and thick. Adjust seasoning. Serve with Whole Wheat Flatbread.
