A chimichurri is fabulous stuff - it's a traditional Argentinian salsa that is traditionally served with steaks. Argentina produces some of the finest steaks in the world, and this chimichurri sauce is the national, traditional accompaniment. Chimichurri is also one of the easiest sauces you'll make. It's just as simple as a vinaigrette - olive oil, vinegar, a bit of garlic and either parsley or cilantro, and you're almost there. And just like a good vinaigrette, it can double as both a marinade and as a salsa or sauce served on the side. Matter of fact, it's just as delicious on grilled chicken as a marinade and sauce as it is with flank steak or sirloin.
