TG Mirepoix, Mirepoix Recipe, Mirepoix Definition - Carrots, Celery and Onion
Mirepoix is a classic flavor base, primarily from France, but used throughout Western Europe. It's a combination of onion, carrots and celery, with about twice as much onion as carrot or celery for the classic Mirepoix ratio. Sauteing Mirepoix before adding any number of ingredients lays down a flavor base that really makes dishes extraordinary.
