My son Ricky - who is my budding chef (he's 12!) - came up with this fresh salsa. I love it. Can't be better.
6-7 Roma or small tomatoes, seeded and diced
1 small bell pepper, seeded and diced
1 bunch green onions, tops included, minced
2-3 cloves garlic, minced
2 limes - juiced
1 chipoltle chili, (canned) plus about 1 Tbsp of reserved sauce
1 Tbsp minced parsley
1 Tbsp minced cilantro
1 tsp kosher salt
Mix all ingredients in the bowl of a food processor, and pulse 3-4 times until well combined, but still chunky. Adjust salt to taste. Serve with homemade chips, or Eenie Meanie Chili with Beanies. Or a spoon.
