A chimichurri is fabulous stuff - it's a traditional Argentinian salsa that is traditionally served with steaks. Chimichurri is also one of the easiest sauces you'll make. It's just as simple as a vinaigrette - olive oil, vinegar, a bit of garlic and either parsley or cilantro, and you're almost there. And just like a good vinaigrette, it can double as both a marinade and as a salsa or sauce served on the side. Matter of fact, it's just as delicious on grilled chicken as a marinade and sauce as it is with flank steak or sirloin.
